The t bone is a thick juicy piece of beef and a t bone steak recipe must make sure that the juices are trapped inside the meat when it is cooked.

As with any meat, the t bone steak will benefit if it is first soaked in a marinade.  Rub the meat all over with coarse ground pepper.  Do NOT use any salt, since salt will draw the juices out of the meat.  Cut little gashes in the meat with the point of a sharp knife.  Peel and slice a couple of garlic gloves and force little bits of garlic into the gashes in the meat.

Put the meat in a bowl or soup-plate which is wide enough to hold the meat without having to bend up the sides.  If you are cooking several steaks, use a wider bowl or let them overlap each other.  Pour on a little olive oil and a glass of red wine.  The better the wine, the better the final taste will be.  Add some chopped herbs, marjoram, oregano, parsley, thyme.  Powdered dried herbs will do if you do not have any fresh ones.  Grind on some more pepper.

Leave the steak in the marinade for several hours, turning it once or twice so that the marinade reaches all parts of the meat.  If you are doing several steaks, make sure that all the steaks are getting the benefit of the marinade.

When you are ready to cook the steaks, take them out of the marinade and dry them on kitchen paper.  A t bone steak recipe requires a hot heat, preferably on a barbecue.  If you are doing them indoors, they are best done in a heavy grilling pan.  Oil the pan first with olive oil.  Rub a little salt on the steaks immediately before grilling them.  That way, the salt will not make the steaks dry,  When the pan is very hot, put in the steak, leave it for less than 30 seconds and turn it.  This is so that both sides of the steak are immediately sealed and the juices are kept inside the meat.  The heat can then be turned down just a little.

The length of time the steak is grilled depends on how rare (red) you want your meat and on how thick the steaks are.  For a t-bone steak which is one inch thick, you need to grill it for less than 10 minutes if you want it red inside.  A well done steak will take 15 to 20 minutes.

T bone steak is a small piece of bone cut from the small end of the tender loin of the beef. It is mainly a cut T-shaped bone of beef with meat on either side. This is so tender that when grilled, this just melts into the mouth like butter. This is preferred as a dry heat preparation since these tastes better that way. T-Bone steak recipe:

Ingredients: For 4

1. T-bone steaks of 1-1/2 inches thick 4-24 oz.

2. Small onion 1.

3. Cloves of garlic 4.

4. Worchestire sauce (homemade or bought) 1 cup.

5. Butter 1 stick

6. Vinegar 1 tbs.

7. Salt and pepper to taste.

8. Louisiana hot sauce to taste.

Preparation: Takes 14 minutes to make and serves 4.

1. Remove the steaks from the refrigerator and allow them to come to room temperature. This is an important point to be remembered.

2. Start the grill. Outside grilling is preferred where the charcoal is used for heat. The steaks taste better on a charcoal heat. The grilling should be done at a high-temperature or preferably medium-high.

3. In a saucepan add the butter, onion and garlic. Fry them until they become translucent.

4. Once this is done, add the vinegar and both the sauces mentioned above and bring it to a simmer.

5. Apply this paste liberally over the T-bone steaks. Place it directly over the heat on the grill. This takes only 7 minutes to grill on one side and will fetch medium to medium-rare steaks that do not even require a sauce.

6. After 7 minutes turn the steak to the other side. This should be done only once and grill the same way on the other side.

This T bone steak recipe gives a medium steak that melts in your mouth. Serve it with a big baked potato and green salad.
